There is already a byte out there on creating simple datasets and this is the best way to start extending existing ones to build reports. Once you've created a dataset you may want to merge it with another. Perhaps making a link between two product areas. This can be done through the lens builder UI which allows you to add multiple datasets together with different join types.

The below video will walk you through the steps of joining different datasets together so that you can have a single report with multiple sources using common dimensions.

When it comes to the datasets we ship as part of our products we try to include as much reusable value as possible so you can build your own reports. Due to dashboard requirements and time we're not always able to include every object or field. We do try to include in some product areas the ability to add custom fields through the app template but its common to want more.
